BACON!!! Oh BACON!!!

Hot Candied bacon, there isn't a better flavour or feeling when bacon just Dissolves in your mouth, with that Almighty crunch and squirt of flavour.

2 large baking tray's lined with good quality baking paper.

1kg Rindless rashers of bacon (no eye pieces)

300g Light brown Sugar

5g finely cracked black pepper

10g chilli flakes

Heat Fan forced oven to 165 C, while heating oven layer all rashes (with spaces between each) onto the lined trays, then the fun begins.

Start by layering a good amount of the sugar evenly covering the bacon. mix your pepper and chilli together and lightly sprinkle a very scarce quantity of the mix over all the bacon, flip the rashes over and repeat the process.

Cook for 5mins, then remove and drain excess fat and sugar, repeat this process around 8 times (varies depending on fattiness of the bacon).

one desired crispness is attained remove from trays and air out till cool, store in an airtight container in a dry area (not your fridge), will keep for 3 to 4 weeks.
