Lemon snowdrops
Mix together thouroughly : 1/2 cup soft shortening, 3/4 cup sugar, 1egg, 2tblsp lemon juice, 1tblsp water. Sift together and stir in : 1 3/4 cup flour, 1 1/2 tsp baking powder, 1/4 tsp salt. Mix in : 2 tsp lemon rind, 1/2 cup chopped nuts. Chill dough. Roll into balls the size of walnuts. Place 2 inches apart on baking sheet. Bake 12-15 min @400F. When done remove from oven and while still hot roll in confectioners sugar.
